Greek Yogurt Apple Coffee Cake

For the perfect holiday brunch...

Name a better meal than brunch... I'll wait. I seriously love it so much. There is an endless amount of food you can make, because it's brunch. Sweet or savory, it all works, and everyone is happy. One particular brunch item I have been super into, as of late, is coffee cake. Sweet, moist, fluffy, delicious - coffee cake really is the perfect brunch menu item for me.


I wanted to create something that was a bit different than your average coffee cake, without deviating too much from the traditional recipes. So I started with the dairy. Did I want to use buttermilk, sour cream, Greek yogurt? Coffee cake definitely needs a nice tang and Greek yogurt seemed perfect. I also wanted to play with some textures and flavors. It is fall, and apple season is still in full swing. This coffee cake has small diced apples sautéed in brown butter and tossed in allspice. Are you hooked yet? And we're topping this deliciousness with slivered almonds. We're talking perfection here people.


Ok, let's talk about Greek yogurt for a second. As always when I create my recipes, I try to use local ingredients. It's one of the most important aspects of my blog - supporting local. Ellenos Real Greek Yogurt is about as local and real as you're going to get. Located in Pike Place Market, they opened their doors in 2013, and have been winning the hearts of Seattleites ever since. I love all of the flavor options they have to offer. I cook with their unsweetened Greek yogurt quite a lot, and bake with their vanilla been Greek yogurt almost as often. I also love stopping by the market for a walk around size of my favorite flavor whenever I can - marionberry pie.
