A winning dessert for everyone!
I have been in a bit of a recipe writing rut lately. So I reached out to my family and asked them for some ideas of what to make. My husband ALWAYS asks for scalloped potatoes with ham, and for some reason I always say no. But his next suggestion was a winner. He said I should make a dessert pizza. I took that idea and ran with it.
I wanted something that wouldn't be too sweet, and wouldn't be too difficult. I didn't want to make pizza dough (although that would be delicious with cinnamon sugar on it, and honey somewhere in there), because I really wanted to keep it simple. So I decided to use my sugar cookie recipe as the base.
Strawberries are also in season, so that seemed like an easy decision as to what the topping should be, and ricotta cheese just seemed like the best way to bring everything together. Cream cheese could also be a great option, but I wanted to make the ricotta fresh, from scratch.
So here we have it - a sugar cookie base; mint and lemon macerated strawberries, and homemade ricotta. AND a Nutella drizzle. Trust me. This dessert cookie pizza will blow your mind.
