Social Creative Conversations

What a joy it was to be a guest on Social Creative Conversations. Amy and I had the best time recording our podcast. We talked about food, life, and everything else, and it was truly the highlight of my week! Honey Butter Toffee Cookies

While we were planning the podcast, we asked the instagram world if they had any questions for us. Well one of the questions I had to answer was what is my favorite ingredient. I obviously couldn't just choose one, so I chose two: Honey and Salted Butter.

My sister calls it my signature. Anything with honey and butter in it - which is almost everything I make. Honey is just a beautiful sweetness. It isn't overpowering and gently adds to the flavors of everything else around it. Butter - I have so much to say about butter. The richness, the flavor, the smell it fills your house with. Ask my mom, I've loved butter since a very young age, and I don't anticipate any of that changing anytime soon.

Amy and I wanted to do something special for all of you who listened to the podcast. We wanted to give you an exclusive recipe that represented who I am. So here we have it - Honey Butter Toffee Cookies. I played around with this recipe a bit, and thought - hmm, I want this cookie to be a brown sugar cookie, almost like a chocolate chip cookie. But then as I was working through the recipes, I realized that I wanted the toffee to be the star of the show, and I wanted to make it from scratch. This is how my honey butter toffee was born. Y'all, it's so good, I can't WAIT for you to try it. AND it is so easy to make. Seriously, I would not lie.

Honey, butter, brown sugar, and a pinch of salt = Honey Butter Toffee. Is your mouth watering just thinking about it? Mine is. I browned the butter a bit before adding in the brown sugar and honey, to give the toffee a more developed nutty flavor. Best decision ever.

Now, for the cookies. I wanted a cookie that would melt in your mouth, and highlight this delicious toffee. So I went with a sugar cookie base. Let me tell you, it did NOT disappoint. WOW. Be careful not to eat these as soon as they come out of the oven, the hot toffee will probably burn your tongue. But, once they have slightly cooled, do yourself a favor and bite into one of these, and try to tell me your heart does not sing. Mine sure did. 

Recipe testing is such a fun part of this food creation journey that I am on. It was such an honor to work with Amy on a recipe we wanted to be exclusive to the podcast listeners. I hope you found our conversation as uplifting and inspiring as we wanted it to be. The journey of a creative is not always an easy one, but WOW is it fulfilling.
