Quick, easy, and delicious.
Once quarantine started, I wasn't the best about consistently eating breakfast, let alone a healthy breakfast. *Raise your hand if you used to stop at a coffee shop for a parfait and a latte on the way to work every morning.*
And, as an accountant by day, I don't have the time to whip up the fancy 30 ingredient meals I would like to eat for breakfast.
So after months of trying to figure out what works best for me, I realized that making my own parfait is easy and more delicious than any packaged item I've ever purchased.
All you have to do is layer your favorite yogurt, fruit, and some of that granola you're now making at home - and voila. It is seriously that simple and the possibilities are endless.
For this parfait, I layered Ellenos Vanilla Bean Yogurt with raspberries, blueberries, mangos, granola and topped it off with homemade strawberry jam. All of the ingredients I had on hand, making it a quick and easy breakfast!
