I look forward to peach season every year!

Peaches are sweet, juicy, refreshing, and can be used for any meal at any time of the day. They literally go with everything.
Breakfast. Lunch. Dinner. Dessert.
Morning to night - they are at your service.
The other day I was craving some version of a peach salad, but I didn't have a lot of time. I also just wanted to use what was in my fridge. This peach, arugula, and tomato salad is what I ended up with.
Set on a bed of light and airy whipped goat cheese - the peppered arugula, sweet peaches, and tangy goat cheese are well balanced with the bright tomatoes and sharp balsamic.
It only took me all of 10 minutes to whip this up.
Feel free to play around with this. It would be great with any stone fruit, maybe topped with some sort of protein - prosciutto, you available? A lemon vinaigrette would also pair well. The choice is yours, and the options are endless.

Ingredients
1 Peach (firm but ripe)
1/2c Cherry Tomatoes
1c Arugula
4oz Goat Cheese
4oz Heavy Whipping Cream
2TBSP Balsamic Vinaigrette
Balsamic Glaze or Reduction (I use Nonna Pia's)
Salt and Pepper for topping
Directions
Cut peaches into slices. Set aside
Cut tomatoes into quarters (I used heirloom cherry tomatoes in this recipe, but really any tomatoes will do)
Toss arugula and tomatoes in balsamic vinaigrette. Set aside
In the bowl of a stand mixer fitted with the whisk attachment, add goat cheese and heavy whipping cream and mix on medium-high speed for about 3 minutes. It should be fluffy and uniform
On your plate, or serving platter, spread whipped goat cheese. Add arugula and tomato, and top with sliced peaches. Drizzle with balsamic glaze (optional), and top with a dusting of salt and pepper
