If there has been one staple in my house my entire life, it has to be strawberry jam. It's quintessential. Nostalgic. Homey. I mean, who doesn't like it?
Rock it on a PB&J - yes.
Slathered on an english muffin - absolutely.
Piled on a warm biscuit - need this now!

This strawberry jam recipe is SO easy, you will literally never buy it from the store again. Not too sweet and bursting with strawberry flavor, this recipe satisfies the masses.

Ingredients
2lbs Fresh Strawberries
1.5c Sugar
2TBSP Lemon Juice
Directions
Hull and dice strawberries into large chunks
Combine strawberries, lemon, and sugar in a dutch oven and mash until juice starts to form. Make sure that some of the strawberries maintain their integrity. We love a nice chunky jam
Heat strawberry mixture over medium heat, constantly stirring. Note: the strawberries will start bubbling up, as long as you keep stirring they wont boil over.
Place a small plate in the fridge to chill
After about 25 minutes the jam should be thick and reduced.
Spoon a small amount of jam on chilled plate. Drag a spatula through the jam, if it leaves a trail that does not immediately fill, the jam is ready with the right consistency. If not, continue to stir the jam over medium heat for 2 more minutes and repeat the chilled plate-freezer process.
Take off of heat and let cool for 10 minutes
Serve warm, or pour into an airtight container and store for up to 3 weeks
