Pecan Butter Balls

Pecan perfection!

These pecan balls have been gracing our cookie corner for as long as I can remember. My grandma would always bake a million cookies around the holidays. You name the cookie, I can almost guarantee it was part of her repertoire.


I didn't used to like these pecan butter balls. I couldn't appreciate the reason they fell apart on the first bite was because there is so much glorious butter that they melt in your mouth. I also didn't love how they were finger-licking-good, literally because of the powdered sugar. But when I recently made them with my mom, I was overwhelmed with how perfect this two-bite-treat really is. No wonder they are one of my sister's favorites!


This recipe is such an easy recipe, it takes about 30 minutes from start to finish for the first batch. You could literally whip these up after work, and everyone who eats them will be thoroughly impressed.

Chopped pecans, butter, flour, and powdered sugar are the main ingredients - this recipe has a pretty basic lineup.

I love when I am able to make something that is simple, yet delicious, and not overly time consuming. This recipe checks all of those boxes!

🏷 Makes about 30 balls

 

Ingredients

  • 1c Salted Butter, softened

  • 4TBSP Powdered Sugar

  • 1tsp Vanilla

  • 2c Flour, sifted

  • 1c Pecans, chopped

  • 1/2c Powdered Sugar


Directions

  • Preheat oven to 350°F

  • In the bowl of a stand mixer fitted with a paddle attachment, cream butter and 4TBSP of powdered sugar together

  • Add vanilla and mix until combined

  • Add flour and pecans, and mix until combined

  • Using a small cookie scoop, or a 2 tsp measuring spoon to scoop out the cookie dough and roll it into a ball between the palm of your hands

  • Bake for 16 minutes

  • Roll balls into a bowl of powdered sugar, using a fork to toss the balls - you want to do this while the balls are still hot so the powdered sugar sticks

  • Let the pecan balls cool a bit before eating them
