Perfectly sweet with a hint of lavender

These cookies are perfect for summer. Deliciously sweet northwest honey, and perfectly fragrant lavender. If honey lavender isn't the most perfect marriage then I'm not sure I believe in love.
I made these cookies a couple of weeks ago when I hosted the Seattle Times at my house to discuss my food blog and my participating on Top Chef Amateurs. I wanted to bake something since that is where my true passion lies, but also wanted to provide a recipe that anyone could try at home, regardless of experience.
I started with my sugar cookie recipe as a base (which I swear I use for everything because it is just so damn good), and enhanced the cookie with 2 tablespoons of rich northwest honey and just 1 teaspoon of dried culinary lavender. It is amazing how little lavender you need to get the flavor you want.
Did you know there are so many different types of lavender, and only one of those types should go in your baked goods? If you've ever had something with lavender in it that tastes like you are drinking a bottle of perfume, then it's likely decorative lavender (french lavender) was used instead of culinary lavender (english lavender). If you're not a fan of lavender, I still suggest you give this recipe a try, I might just convert you.
